Chicken broth

My mother has made this every other week for as long as I can remember. It is my ultimate comfort food.
Ingredients
 8 servings
500 g chicken necks or 8 chicken frames
Whole peeled onion
Head celery or large bunch of parsley
20 g peppercorns
2 medium carrots
1 leek
1 parsnip
2 litres water

Steps

  1. 1. Place chicken necks/frames, onion, parsley, peppercorns and water in a large pot a bring to boil.

  2. 2

    Lower heat and simmer for 2-3 hours
  3. 3. Strain through muslin into a new pot and discard all bones etc

  4. 4. Add in sliced carrots, leek and parsnip and simmer until veg is just soft.

  5. 5. Serve with egg noodles
