Bacon Paste BBQ Chicken Skewers

BBQ Sauce
1/2 onion,
diced
1 cup
ketchup
1/2 cup
molasses
4 Tbsp worchestershire
sauce
4 Tbsp cider
vinegar
4 Tbsp
mustard
1/2 tsp
liquid smoke
1 tsp garlic
powder
1 tsp black
pepper
1 chipotle
in adobo, chopped
1/4 cup
frozen raspberries
Chicken
2 lbs
boneless skinless thighs (8)
2 tsp kosher
salt
4 Tbsp
favorite rub
2 Tbsp sugar
4-8 slices bacon
Steps1. Add all the BBQ sauce ingredients to a small sauce pot and bring to a simmer. Blend with a stick blended until smooth and then retain on simmer while you prepare everything else.
2. Add the bacon to a food processor and processor until its a smooth paste.
3. Cut the chicken into bite size chunks and then season with the salt and toss. Add the bacon paste on top and let sit while you start the grill.
4. Heat a grill to 450F over direct heat.
5. Add the seasoning and sugar to the chicken and with gloves hands mix the chicken until coated.
6. Skewer the chicken in a tight bunch.
7. Grill over direct heat 3-4 minutes per side until the edges begin to crisp. Baste with copious sauce and turn once more until the sauce caramelizes. Remove to a platter, and rest 10 minutes. unskewer and serve as bite size chunks.
