My way stuffed peppersIngredients
6 servings
1 lb ground
turkey
6 large bell
peppers (tops and core removed)
1/2 cup
cooked rice
1/4 chopped
onions
1/4 cup
chopped tomatoes
3 gloves
minced garlic
2 tbsp
tomato paste
1/4 cup
prego sauce (optional)
1 cup
shredded cheese (your fav) I used mixed parmesan n cheddar
1 tsp
oregano
1 tsp smoked
paprika
1 tsp pepper
1 tsp
parsley
Pinch salt to
taste
1/8 cup dry
sherry (optional)
2 tbsp olive oil
Steps
1. Preheat oven to 400°
In a sauce pan on medium heat add olive and onions. Saute until onions are translucent.
2. Next add tomato paste, tomatoes, garlic and stir for about 2mins. Then add ground turkey. (Use wooden spoon to crush turkey)
Add all powdered seasonings, dry sherry and stir. Cook for 6mins or until turkey is no longer pinkish.3. Add cooked rice and prego sauce, stir and then cover to simmer for 5mins or until liquid is dried out
4. Cut the tops off the bell peppers and remove the core. Place them in 9" baking dish and drizzle olive oil over them.
5. Spoon in turkey mixture in each peppers, add prego sauce (optional), cover and bake for 35 mins.
6. After 35 mins remove cover add cheese and bake for 10mins or until cheese is bubbly. Sprinkle dried parsley, Serve and enjoy
