Easy Pork Ribs in Coconut Milk with Shrimp

Here's a short cut recipe for the busy mom. If you love coconut milk, Asian shrimp paste &/or pork ribs, try this out!
Visit your neighborhood Asian store for the shrimp paste and coconut milk (powder or fresh).

Ingredients

 2 people

5-6 pcs Pre-boiled and tender pork ribs or tail (unsalted)

1-2 tomatoes, chopped

4 garlic cloves, chopped

1 onion, chopped

1 bunch Okras or green beans, sliced

1/4 c Coconut milk (fresh) or (3Tbsp coconut powder mixed in water)

2-3 tsp scoop of spicy shrimp paste (Thai, Filipino, Malaysian, Indonesian, Singaporean - any works! Remove liquid if watery)

Cooking oil for sauté

Pepper, to taste

Steps

  1. 1. In a sauce pan, sauté the garlic and onions in oil until fragrant.

  2. 2. Drop in sliced tomatoes together with its juice /seeds. Sauté

  3. 3. Add coconut milk. Bring to a simmer.

  4. 4. Add sliced okra or green beans and cooked pork ribs. Cover and cook on low heat, mixing often, until veggies are cooked and sauce thickened.

  5. 5. Serve with hot rice and enjoy!
