Quick Chinese chicken with broccoli and spicy black bean sauce
Ingredients
2 people
1 chicken breast - skinless and chopped into
small pieces
6 sprigs broccoli
1 small white onion diced
2 teaspoons ginger purée (use 1 teaspoon ginger
powder if cannot get purée)
Salt
100 ml water
1 tbsp oil (I used canola)
1 dessert spoon black bean sauce
Steps
Heat a large frying pan and put in the oil and fry the chopped onion until golden. At the same time put the broccoli spears in the microwave for 2 mins on high
Add the ginger to the frying pan with 1 spoon black bean sauce and then add the thinly sliced chicken. Stir and coat with the juices.
Pour in the water, cover and reduce the heat. I cook for 2-3 mins until the chicken is cooked through.
Serve with white rice - YUMMY
