Vegetarian Singapore Rice Noodles

Ingredients
Cooking oil
2-3 garlic cloves, minced
2 tbsp curry powder, divided
1 cup celery, juilenned
1/4 green peppers
3/4 red onion, juilenned
1 tbsp cooking wine
Dash sugar
1/2 package vermicelli noodles, cooked + drained
1 tbsp sriracha
1/2 tbsp chili paste
1.5 tsp tumeric
Salt to taste
1 cup seasoned plant-based chicken, grilled + shredded
2 eggs, cooked + juilenned
Dash sesame oil
Sesame seeds (optional)

Steps

  1. 1. Heat oil and 1 tbsp curry powder in pan. Sauté garlic onions, celery, and peppers. Salt to taste. Stir in eggs. Set aside.

    2. Heat oil in pan. Add noodles, 1 tbsp curry powder, salt, sriracha, and chili paste. Add wine and sugar. Stir and coat noodles evenly. Add chicken and sautéed vegetable mixture. Drizzle sesame oil. Sprinkle with sesame seeds.
