Quinoa Upma

Ingredients
1 cup quinoa (I used tri colour quinoa)
1/4 cup chopped onions
1/4 cup chopped carrots
1/4 cup chopped capsicum
1/4 cup chopped tomatoes
1/4 cup green peas
1 tsp grated ginger
leaves Few curry
1 tsp cumin mustard seeds
1 tsp urad daal
1 whole dry red chilli
to taste Salt
Coriander leaves for garnishing
2 tbsp oil
2 cups water

Steps

  1. 1. Wash the quinoa and keep aside. Take a pan heat the oil once heated add cumin mustard seeds and urad daal

  2. 2. Once crackle add curry leaves and chopped onions sauté for few seconds also add grated ginger

  3. 3. Add all chopped veggies and sauté for few seconds

  4. 4. Now add 2 cups of water and boil for few seconds. Now add the washed quinoa as well as salt and cook until all water is observed and the quinoa is cooked

  5. 5. Your healthy quinoa upma is ready garnish with coriander leaves.
